酒莊簡史
Bibi Graetz 酒莊由 Bibi Graetz 本人於 2000 年代初期創立，位於 Florence 附近的 Fiesole 山區。Bibi 出身藝術世家，父親 Gidon Graetz 是瑞士-以色列雕塑家，母親是挪威人，家族於 1950 年代移居 Tuscany。Bibi 最初在 Florence 的 Accademia delle Belle Arti 學習藝術，曾涉足彩繪玻璃創作，但在 30 歲時才真正投身釀酒事業。
轉捩點發生在 2000 年代初期，當 Bibi 前往 Bordeaux 並結識 Peter Sisseck 和 Jean-Luc Thunevin 等釀酒大師後，他意識到釀酒的無限可能性。他回憶道：「我從零直衝雲霄，我告訴自己『我要釀出世界上最好的酒』，但當時我真的不知道這意味著什麼。」
酒莊最初位於家族莊園 Vincigliata，後來在 Covid-19 疫情期間收購了 Fiesole 中心的歷史建築 Villa Aurora（前身是 Queen Victoria 曾下榻的 Hotel Aurora，部分空間曾是 1970 年代的迪斯可舞廳 Bar Blu），並將其改建為新酒窖。同時期，Bibi 收購了 Olmo 地區海拔 450 米的高海拔葡萄園，總計擁有 90 公頃葡萄園，從原本主要購買葡萄的釀酒師轉型為擁有完整葡萄園的 vigneron。
釀造哲學及核心理念
Bibi Graetz 的釀酒哲學經歷了重大轉變。早期他追求濃郁集中的風格，但 2009 年份的困難年份成為轉捩點——當年葡萄果實巨大，無法達到濃縮效果，反而釀出了「完全非 Tuscan 風格……完全 Burgundy 式的、透明且驚人的」酒款。從此，Bibi 轉向追求輕盈、透明、優雅的風格。

- 人比風土重要： Bibi 是風土論的異議者，他認為「對我來說，最重要的元素是人，第二才是風土。」他相信偉大的釀酒師即使在普通風土也能釀出卓越的酒，就像偉大的藝術家用劣質顏料也能創作傑作。
